Just to update – It seems as though the sweating/rapid heartbeat and frequent urination have died down. The last few days I haven’t experienced it, thankfully. The frequent urination has tapered off and died down, while the sweat/heart rate just stopped altogether.
I think the main problem was a drop in blood sugar in the middle of the night. I notice the rapid heartrate when I need to eat something, which never happened during hunger before, but with so much starch, I guess it’s different until my body fully adjusts.
