I made mayonnaise using olive oil and plain yogurt, with a pinch of sugar to offset the tartness of the yogurt. I used this to make chicken salad with cooked chicken, celery and dried cranberries.

Was it good? How much of a difference was the taste?

It tasted good to me, creamy and moist, which is what I wanted. I also like yogurt, so maybe if that weren’t true maybe I wouldn’t like this as much. I didn’t measure anything, but I used maybe 3/4 cup yogurt and 1/4 cup olive oil.

I didn’t think to make it with yogurt! Interesting. Did you do it in the blender?

No blender, I just mixed it in a bowl.

If you leave out the sugar, use Greek/fullfat yoghurt and. add some garlic and thinly sliced cucumber, you get tzatziki
