    4 largish sweet potatoes, peeled and cut up into relatively uniform pieces

    2-3 tbsp butter or butter and coconut oil

    1/4 cup sugar (white, brown, or coconut)

    three-finger pinch of salt (about 1/2 tsp)

    Preheat oven to 400. While the oven is heating, prepare the sweet potatoes. Melt butter and sugar together; stir in salt. In a large bowl, mix butter mixture with potatoes so that the pieces are coated. Grease a sheet pan and arrange sweet potatoes in a mostly single layer.You can use two 9X13 inch pans if you don’t have a sheet pan. Sprinkle more sugar on top, if desired. Cover and bake for 30-40 minutes or until potatoes are fork tender. Stir. Continue baking, uncovered, for 15-20 minutes until potatoes begin to carmelize.

    That’s about how I cook ’em. The browner they get the sweeter they get. I don’t use sugar, but I bake them uncovered so they get drier, browner, and ultimately more concentrated.

    The only problem I have with sweet tates is I get full really fast eating them.
