Hey everyone,
I read 12 Paleo Myths and it was quite good, but some questions remain. Most notably, Matt makes the bold statement that eating carbs does NOT raise blood sugar OR insulin. In a healthy person I understand it wouldn’t raise blood-sugar because insulin is supposed to keep that in check. But Matt saying what he said doesn’t make sense for several reasons:
*If eating carbs doesn’t raise blood sugar, then why do diabetics have to take insulin after a meal?
*If insulin doesn’t lower blood sugar, then the same question above applies.
*if that isn’t the function of insulin, then what is? And more importantly, how have so many extremely educated people gotten it so wrong for so long?
Would love clarification on this.
